Ingredients
• 1 (15-ounce) can organic chickpeas, drained and rinsed
• ¼ cup tahini
• 2 tablespoons fresh lemon juice (a little less than 1 lemon)
• 2 tablespoons extra virgin olive oil
• 2 cloves garlic
• ½ teaspoon fine sea salt
• 2 tablespoons cold water, as needed
Optional Garnishes
• Drizzle of extra virgin olive oil
• Sprinkle of paprika
• Chopped fresh parsley
• Whole chickpeas
Instructions
Step 1
Drain and rinse the chickpeas well.
For extra-smooth hummus, you can remove the loose skins from the chickpeas, though this step is optional.
Step 2
Add the following to a blender or a food processor:
• Chickpeas
• Tahini
• Lemon juice
• Olive oil
• Garlic
• Salt
• 2 TBSP Water
Blend for about 1 minute.
Step 3
Scrape down the sides of the bowl.
If needed: with the processor running, add additional cold water 1 tablespoon at a time until the hummus reaches your desired smooth, creamy consistency.
Pulse until blended
Step 4
Taste and adjust if needed:
• More lemon juice for brightness
• More salt for flavor
• A little more water for a lighter texture
• Another drizzle of olive oil for extra richness
