Ingredients
Cucumbers
8 small pickling cucumbers (Kirby or similar), washed
Brine
2 cups filtered water
2 cups distilled white vinegar (5% acidity)
2 tablespoons sea salt or kosher salt (non-iodized)
Flavorings
4β5 fresh dill sprigs
2 teaspoons dill seed
3 garlic cloves, smashed
1 teaspoon whole black peppercorns
1 teaspoon mustard seed
Β½ teaspoon coriander seed (optional)
Β½ teaspoon red pepper flakes (optional, for a little heat)
Instructions
Step 1
Wash the cucumbers thoroughly. Slice them into spears or chips, or leave them whole if they're small enough to fit in your mason jar.
Step 2
Pack the mason jar tightly with the cucumbers. As you fill the jar, layer in the fresh dill, smashed garlic, dill seed, peppercorns, mustard seed, coriander (if using), and red pepper flakes (if using). Tuck an extra sprig of fresh dill near the top for even more flavor.
Step 3
In a small saucepan, combine the filtered water, distilled white vinegar, and sea salt. Heat over medium heat just until the salt completely dissolves. There is no need to boil the brine.
Step 4
Carefully pour the warm brine over the cucumbers until they are completely covered, leaving about Β½ inch of headspace at the top of the jar.
Step 5
Allow the jar to cool to room temperature. Seal with a lid and refrigerate.
