Ingredients

  • 3 cups organic old-fashioned rolled oats

  • 1 cup chopped nuts (pecans, walnuts, and/or almonds)

  • ¼ cup local honey (if available)

  • 2 tablespoons organic avocado oil

  • 1 teaspoon ground cinnamon

  • ½ teaspoon organic pure vanilla extract

  • Pinch of sea salt

Optional Add-Ins (after baking)

  • ½ cup raisins, dried cranberries, or chopped dates

  • ¼ cup pumpkin seeds or sunflower seeds

  • Unsweetened coconut flakes

Instructions

Step 1
Preheat the oven to 325°F (163°C). Line a baking sheet with unbleached parchment paper.

Step 2
In a large mixing bowl, combine the oats, chopped nuts, cinnamon, and sea salt.

Step 3
In a small bowl, whisk together the honey, avocado oil, and vanilla extract. Pour over the oat mixture and stir until everything is evenly coated.

Step 4
Spread the granola into an even layer on the prepared baking sheet.

Step 5
Bake for 25–30 minutes, stirring once halfway through, until lightly golden and fragrant.

Step 6
Allow the granola to cool completely on the baking sheet. As it cools, it will become crisp and form clusters.

Step 7
Once completely cooled, stir in any optional dried fruit, seeds, or coconut flakes. Store in an airtight container.
