Ingredients
8 large eggs
½ cup cottage cheese
1 cup fresh spinach, chopped
½ cup bell pepper, diced
2–3 green onions, sliced
½ cup shredded cheese of choice
¼ teaspoon sea salt
¼ teaspoon black pepper
Instructions
Step 1
Preheat the oven to 350°F (177°C). Grease a 12-cup muffin tin or line it with silicone muffin liners.
Step 2
In a large bowl, whisk together the eggs and cottage cheese until smooth.
Step 3
Stir in the spinach, bell pepper, green onions, shredded cheese, sea salt, and black pepper until evenly combined.
Step 4
Divide the egg mixture evenly among the prepared muffin cups.
Step 5
Bake for 30 minutes, or until the egg bites are set and a toothpick inserted into the center comes out clean.
Step 6
Allow the egg bites to cool for 5 minutes before carefully removing them from the muffin tin.

Swap the spinach and peppers for your favorite vegetables like mushrooms, broccoli, tomatoes, or zucchini. Try cheddar, mozzarella, Swiss, feta, or pepper jack for a different flavor, or add cooked turkey sausage or bacon if you prefer. *You can also blend the eggs and cottage cheese together in a blender or with an immersion blender instead of just whisking them. It creates a even lighter, fluffier texture!
